At Ogurayama Farm in Azumino, Nagano, no chemical fertilizers or herbicides are used. They are engaged in the “Doho style,” which produces safe and tasty crops by activating plant hormones produced by the crops themselves.
Ogurayama Farm’s “fully ripe Fuji apples” have a good balance of sweetness and sourness, and when baked, the flavor is concentrated.
The cinnamon used is organic cinnamon (from Sri Lanka), which is more fragrant and milder in flavor than regular cinnamon.
